Hi dear friends, I made a moong dal dessert with coconut and tapioca dessert for my family and for the @LotusShares Plant Power Cooking Challenge | Week #3. This is an easy recipe from simple ingredients which are easy to find anywhere. Our family likes to this a lot.

I know this recipe is not normal for some countries. Many countries like to make beans for meals, but in my country (Cambodia) we like to use beans in desserts and cakes.

Ingredients

  • 1 cup moong dal, whole
  • 2 cups coconut milk, or as you like
  • 1/2 cup tapioca pearls
  • 3/4 cup palm/cane sugar, or to taste
  • 1/2 tsp salt or taste
  • 5 cups water

Soak tapioca pearls in water until soft. Wash moong dal four to five times.

After that boil them with 1 1/2 cups of water until cooked.

After moong dal are cooked, I add the rest of the water and wait until it boils, then add tapioca pearls and stir it. After that I add cane sugar, salt, and coconut milk, then I stir it again.

Boil it one or two minutes and taste, it’s ready.

I love how Southeast Asians use beans and lentils in desserts. I had never seem them used in this way before moving to Cambodia, except for a few Chinese desserts and snacks. This was delicious Pov.

Moong Dal is very healthy and nutritious. I never prepared this combination, will try it for sure.
Moong you used we call it whole moong and split moong with skin(green)/without the skin(yellow) is called dal.
