Still determined not to let the lack of running water and propane deter culinary creativity, I decided to make puris by fire for the family.

First, A Visit From Harry 🐏

Β  Β  Β I've already shared my legendary puri pizza recipe in a previous post, so this will not be a recipe post, but instead a little glimpse into our daily life. Lately the days have been starting with Harry the lamb inspecting the fire pit to smell what we ate for dinner last night. I am still wondering when this cute little guy will figure out that he's not a dog.

Β  Β  Β Harry then usually lets out a "baa baa," which I translate as "open the gate so I can come inside your house." Harry usually gives me some love while I'm working on my morning Hive comments, then impatiently awaits his daily half cashew ration. If there happen to be any banana skins, this is also an acceptable food for our fellow herbivore friend.

Operation Outdoor Puri Pizza πŸ•

Β  Β  Β Later on I nominated myself to make puris outdoors, and this plan was quickly dashed by a short-lived rainstorm. After the storm passed I set everything up once again, and Operation Outdoor Puri Pizza πŸ• began to finally take flight. Our impromptu outdoor kitchen is far from ideal, but Suriname restaurants are overpriced and always disappointing. I will draw sighs of disapproval if I even mention to my family the idea of grabbing a roti meal or fried rice from a nearby restaurant.

Β  Β  Β Before beginning the puri poofing process, I take a moment to pray to the puri gods for hot oil, a steady hand, and perfect inflation for each and every puri. After all, the "unpoofed puri" is always the last one left in the basket. If any of my Indian Hive friends know any proverbs concerning "unpoofed puris," I'd love to hear one.

Β  Β  Β I stole this picture from my wife's phone. I saw her marveling at the perfect roundness πŸ‘ of my puris. After this she poked a hole in it with her finger and released that hot oily carbohydrate steam.

We Won The Propane Lottery 🎰

Β  Β  Β In a surprising turn of events, the main propane bottling facility in Suriname finally manifested a tank of propane. It has been too many days/weeks cooking on an open fire under less than ideal circumstances. We are still without water, but hopefully in less than 6 weeks we'll be beyond these circumstances and outside Suriname's borders.

how thrilling to get some propane finally. In the time that I have spent living overseas I have never seen there be a shortage of this product, there always seemed to be a massive surplus of it. Not so long ago, we were also told to boil our own water but the issue wasn't the lack of drinking water, it was the fact that we were not allowed to leave our houses to obtain it an the government didn't do a very good job of planning the logistics of getting drinking water delivered to over a million people. I think this might have been the catalyst that lead to them dropping the ban on leaving houses because people can only be oppressed so much.

We gotta celebrate the little victories during these times I guess.

On another note I gotta say that I am impressed if you can hold that "squat" position for a long period of time. Even though I have been in Asia for nearly 20 years, that is not a skill I ever obtained even though it just seems to come naturally to the locals.

I too never saw shortages of hardly any kind in Cambodia. It is a huge adjustment from living in a country that produces too much food and textiles, to a country that is fully reliant upon shipping containers and a shady gold mining industry.

You noticed the "squat," that makes me laugh. Sometimes when I'm in the USA standing outside with friends, my back begins hurting so I bust out the Cambo-squat for some temporary relief, only to have everyone stare at me and start asking lots of questions.

I'm sure SE Asia has rubbed off on you in many ways, and you would probably look like a fish out of water hanging out in 'Merica and talking bout' 'Merican stuff like sports, weather, and reality TV shows.

You are not wrong about the reverse culture shock. I recall one time when i was hanging out with some old friends after being out of the country for a decade and I had to be warned to not say some of the stuff that I was saying because it was now considered offensive despite the way that it was the same way that all of us used to speak "back in the day." It seems that since i left everyone has become ultra-sensitive and humor is something you have to be very careful with. I'm not a fan of that.

I can almost envision it...

I wish I could make puris. I know I would fail. We had a thing similar with tortillas called infladas. Marc and my Mexican chef can make them. I've tried and tried. I just can't do it. So frustrating uggghhh. Yours look so good.

Congrats on the propane! You're moving up in the Suriname world. All you need now is some good old fashion water.

Of course you wouldn't fail - you are an incredible cook -- ah now I've read the rest of your comment (guilty of typing and reading at the same time) I see you are experienced at failing - oops. I"m shocked!

Puris are dead simple, the secret all lies in rolling out the dough not too thin or thick, and making sure the oil is hot enough. Also, sometimes it's necessary to quickly spoon hot oil on top to get a full poof. I think if you made one batch of dough, that would be the only learning curve you need.

I didn't get it right my first try either, but the moment you get the golden brown poof, it's like riding a bike, you'll never lose it. Check VahRehVah, he's got a good technique, plus he's hilarious.

Haha "puff up puff up my babies" He makes it look so easy and fast. I will definitely give it a go but I have tried the tortilla ones many times and only failed while Marc and the chef made them no problem.

It is my goal in cooking life to puff somethin' up! Somehow that sounded like I was talking about something else haha.

I wish I could remember the name, but there is some kind of Tibetan bread I ate in Sikkim many years ago, and it is more poofed and larger than any puri. VahRehVah is hilarious, he often burns himself and makes various goofs on camera, and I love the way he talks about food during each tasting session.

Love all these idioms by the way, certainly sound like Indian originals to my ear.

Hmmm....it would definitely need to be fusion music of some kind, perhaps a sitar paired with an accordion could do the trick.
